Pecorino Sardo

Pecorino Sardo is a type of Pecorino cheese. It is made in the Italian state of Sardinia. It is made from sheep milk, mostly from the local breed. Since 1991, it has Protected designation of origin. It is aged for a couple of months, but can also age up to 6 months.[1] It is not as well known outside of Italy as the Romano or Toscano cheeses. It can be used for grating like other cheeses.
