Bici bici

light summer dessert from Southern Turkey, especially Adana and Mersin provinces

Bici bici or bicibici muhallebisi is a Turkish dessert.

It is a very light dessert, which is normal for the southern part of Turkey that it comes from, as well as the Mediterranean in general. It is eaten during the summer in the provinces of Adana and Mersin.[1]

Bici bici is made of crushed ice, starch, and syrup. After the starch is cooked in water, it is left to cool in a tray, and is then chopped. Then, it is flavoured with syrup (usually rose flavoured), and it put on ice, with sugar on top.[2][3]
